Marcus Beans Hot Chocolate & Orange fondant with Baileys Mascarpone

Ingredients; 3 portions

125g unsalted butter

2 Eggs

2 yolks

65g of caster sugar

125g dark chocolate (55-70%) I usually use Callebaut 54.5%

25g plain flour

Zest of 1 orange

Cocoa powder for dusting

Some fresh raspberries for garnish

Baileys Mascarpone

200ml Mascarpone

80g double cream

2 tsp icing sugar (taste to check)

½ a vanilla pod scrapped

50ml Baileys

Start by melting the butter & dark chocolate in a bowl over a pan of gently simmering water, making sure the bowl doesn’t touch the water. Once melted add the orange zest, stir in and set aside, allow to cool slightly.

In a separate bowl Whisk your eggs & yolks together with the caster sugar, until pale and a little fluffy.

Once the melted chocolate and butter have cooled slightly, add the eggs and sugar and mix together. Now sift the flour into the mix, combine all the ingredients together until smooth.

Get some Dariol moulds and rub butter on the inside of the mould, cut a piece of parchment paper the size of the base of the Dariol mould and place in the bottom of the greased mould. Now sprinkle cocoa powder into the mould so that its sticks to the butter, (this helps when turning the chocolate fondant out for serving). Get a tablespoon and fill your mould’s three quarters full with the chocolate fondant mix.

Place into a fan assisted oven at 200c for 8 minutes’, they should be cooked on the outer side and soft in the centre. Remove from the oven and leave for 3 minutes, then very carefully with a knife score around the fondant to help release it. Then get your plate and turn it upside down on top of the fondant and flip over so the plate is the correct way, carefully lift of the mould and the fondant should be in one piece on your plate, remove the parchment paper disk, and this is ready to serve.

For the Baileys Mascarpone whisk the mascarpone and double cream with baileys and the icing sugar, get ½ a vanilla pod and scrape out the seeds. Mix together then serve with your hot gooey fondant.

Garnish with freeze dried raspberries and crumble top for a splash of colour and texture.
